Nigerian Vegetable Soup

Efo Riro is a staple vegetable soup from the western part of Nigeria native to the Yorubas. It is served traditionally with swallows and is simply delicious.  I also love paring this with freshly cooked plain white rice from time to time.

I usually use Tete, Shoko or Ugwu in this recipe as this is traditional. However, I have successfully substituted with Kale and Spinach with excellent results. I served my soup with soft Semolina swallow and this make my Sunday lunch a delightful experience. We certainly didn’t miss rice in the Kush household!

  2. Pour palm oil in a pot over medium heat
  3. Add blended tomato, pepper & onion
  4. Add salt and seasoning and stir
  5. Add the Iru/Ogiri, stir
  6. Add crabs or any cooked meat of your choice and stir
  7. Add Cray Fish
  8. Allow to simmer on medium heat for 5-10 minutes depending on quantities
  9. Add Chopped vegetables and stir
  10. Once it is well combined, turn off the heat immediately. You don't want to overcook the vegetable.
