Technically, this isn’t fried rice because the rice isn’t fried, but who cares it’s delicious and that’s all that counts!
Nigerian Fried Rice
Add washed rice to a large pot and cover with enough water to cook
Add Spices, seasoning and onions...
Cover and allow to cook till almost done
Add Chilli and Chicken franks
Stir, cover and allow the rice to finish cooking
Stir and turn off the heat. Adding the veggies last makes sure they don't over cook and it helps preserve the gorgeous colours.
Serve with whatever you fancy and enjoy!
My tip for this recipe is to use fresh veggies if you can. It took me 20 mins to do all that chopping but the freshness it brings to the dish is well worth it.
